Simple Greek Salad
A fresh, no-cook Greek salad of crisp lettuce, cucumber, tomatoes, peppers and feta with a simple lemon and olive oil dressing. A quick, healthy lunch or side.

Ingredients
- 100g cherry tomatoes, halved
- 30g black pitted olives, halved
- 1 baby cos lettuce, chopped
- 1 cucumber, chopped
- 1 red pepper, chopped
- ½ red onion, sliced
- 60g feta cheese, crumbled
- 2 tbsp extra virgin olive oil
- 1 lemon, juiced
- sea salt
- black pepper
Method
- Put the tomatoes100g cherry tomatoes, halved, olives, lettuce, cucumber1 cucumber, chopped, onion½ red onion, sliced and red pepper1 red pepper, chopped into a bowl. Crumble in the feta and toss everything together.
- Mix the olive oil2 tbsp extra virgin olive oil and lemon1 lemon, juiced juice in a small jar or bowl. Season with salt and pepper.
- Pour the dressing evenly over the salad and enjoy.

Traditional feta is made with animal rennet, so check the label and choose a vegetarian feta if needed.
