Simple Greek Salad

A fresh, no-cook Greek salad of crisp lettuce, cucumber, tomatoes, peppers and feta with a simple lemon and olive oil dressing. A quick, healthy lunch or side.

Ingredients

  • 100g cherry tomatoes, halved
  • 30g black pitted olives, halved
  • 1 baby cos lettuce, chopped
  • 1 cucumber, chopped
  • 1 red pepper, chopped
  • ½ red onion, sliced
  • 60g feta cheese, crumbled
  • 2 tbsp extra virgin olive oil
  • 1 lemon, juiced
  • sea salt
  • black pepper

Method

  1. Put the tomatoes100g cherry tomatoes, halved, olives, lettuce, cucumber1 cucumber, chopped, onion½ red onion, sliced and red pepper1 red pepper, chopped into a bowl. Crumble in the feta and toss everything together.
  2. Mix the olive oil2 tbsp extra virgin olive oil and lemon1 lemon, juiced juice in a small jar or bowl. Season with salt and pepper.
  3. Pour the dressing evenly over the salad and enjoy.

☘ Tip

Traditional feta is made with animal rennet, so check the label and choose a vegetarian feta if needed.
